Marinated grilled shrimp and pasta

I love shrimp and I love pasta! I honestly can’t remember where I got this recipe but when I first made it, I fell in love! What I also love about it is that it’s actually healthy! It’s even more healthy if you use a whole grain pasta.

I did make one change to it, though. The original recipe was for the Marinated Grilled Shrimp only. I added the pasta part. The marinade is so yummy, I decided to make a second batch and toss it into pasta and make it a whole meal. So, keep that in mind when you make this.

You can always just make the shrimp and make your own sides or you can try it the way I have suggested. Either way, it’s delicious!

Marinated and Grilled Shrimp

  • 3 cloves garlic
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce
  • 2 tbs red wine vinegar
  • 2 tbs chopped fresh basil
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 lbs fresh shrimp, peeled and deveined
  • skewers

In a large bowl stir together garlic, oil, tomato sauce and red wine vinegar. Season with basil, salt and cayenne pepper. Add shrimp and stir until evenly coated. Cover and refrigerate 30 minutes to 1 hour stirring once or twice.

Preheat grill for medium heat. Thread shrimp onto skewers. Discard marinade

Lightly oil the grate. Cook shrimp in preheated grill 2-3 minutes each side.

Make another batch of the marinade and toss over your favorite pasta if you would like to make this into a complete meal.
