I’ve got 2 teenagers who can be a little vocal when I make things they don’t like. They are good kids but I do hear some grumbling. I always try to make some part of the meal something they will like for sure. I’ve always done that because I’m not the mom who makes different meals for each child. Both of my kids can be picky so I’d literally have to make separate meals just about every night!
Both my kids were gone for dinner one night this week. I feel sure this is what is going to start happening more and more. My son is a Senior in high school this year so I know that God is preparing me for what is coming. Anyway, since they were both going to be gone, I decided to try something that I knew they’d probably complain about.

I had never made Quinoa before but I was reading on Pinterest how amazing all of these recipes were! So, I had some quinoa and I had some fresh veggies so I decided to make my own recipe. It turned out SO good and it was SO healthy! My husband loved it and we were both excited to be eating this amazing meal that was so good for us!
So, here is my recipe. I hope you enjoy! I’m listing in the ingredients what I used in my Quinoa but you can use whatever veggies you have on hand!
Quinoa With Veggies – Fried Rice Style
- Make 2 cups of cooked Quinoa following the directions on your package of quinoa. I used 1 cup quinoa with 2 cups of water, just like when you make rice.
- Olive Oil
- 1 sweet onion, diced
- 2 small zucchini cut into bite size pieces
- 1 red pepper cut into bite size pieces
- handful of green beans cut into bite size pieces
- handful of snow peas cut in half
- 1 clove garlic, chopped
- salt and pepper to taste
- herbs to taste – crushed red pepper, basil, parsley – anything you have on hand
- 1 tbs balsamic vinegar
- olive oil to taste
Add a about a tablespoon of olive oil to the bottom of a large skillet or wok. Add onions and zucchini. Saute until the onions are translucent. Add garlic and cook for just a minute. Add the rest of the vegetables along with the salt and pepper. I like my veggies cooked a bit so at this point I put the lid on the pan and let the veggies cook and steam at the same time. Cook until the veggies are cooked just how you like them.
Add the herbs and balsamic vinegar. Add the cooked Quinoa to the pan and mix together. Taste test and season as needed. Remove from heat and add extra olive oil to taste.
Serves 3-4
